Olivier salad

Here's a classic recipe for Olivier salad, a popular dish in Russian cuisine:

Ingredients:

  • 3 medium potatoes
  • 3 medium carrots
  • 4 hard-boiled eggs
  • 1 cup cooked chicken (or ham, or bologna)
  • 1 cup green peas (canned or frozen)
  • 1 medium pickled cucumber (or 3-4 gherkins)
  • 1/2 cup mayonnaise
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish (optional)

Instructions:

  1. Prepare the Ingredients:

    • Boil the potatoes and carrots in their skins until tender. Let them cool, then peel and dice into small cubes.
    • Hard-boil the eggs, cool them, peel, and chop them.
    • Dice the cooked chicken (or your choice of meat).
    • Chop the pickled cucumber into small pieces.
  2. Combine the Ingredients:

    • In a large mixing bowl, combine the diced potatoes, carrots, eggs, chicken, green peas, and pickled cucumber.
  3. Add Mayonnaise:

    • Add the mayonnaise and mix gently until everything is well coated. Season with salt and pepper to taste.
